Saint Patrick’s Day- the good news and the bad news
Tuesday, March 17th, 2009Today is St. Patrick’s Day. Many of us are boiling our corn beef with pickling spices. While boiling our meat does not release genotoxic chemicals like frying or broiling our meat does; it contains high amounts of salt due to the pickling spices. We need to include a protective dose of vegetables to neutralize the effects of the salt. So besides the traditional steamed cabbage, add another vegetable or two. Steamed carrots would be a good and colorful addition. If you are also adding potatoes use red potatoes or just leave the skins on. Potatoes contain large amounts of starch and sugar, try to limit the amount you ingest. Hopefully your green beer is gluten-free. Happy St. Patrick’s Day.
